Ingredients
  

  • 1 package Cheddar Bay Biscuit Mix
  • 1 tsp garlic additional
  • 1 tsp Italian seasoning
  • 1 pound lump crab meat fully cooked
  • ¼ tsp paprika
  • ½ tsp onion powder
  • ½ cup mayonnaise plus more if needed
  • 1 tbsp mustard
  • ½ sleeve Ritz crackers crushed
  • 1 cup grated Parmesan
  • Melted butter + 1 tsp lemon juice for brushing

Method
 

  1. Prepare biscuit mix according to package directions, adding extra garlic and Italian seasoning. Set aside.
  2. Preheat oven to 375°F and spray two muffin tins with nonstick spray.
  3. Gently mix crab, paprika, onion powder, mustard, mayonnaise, crushed Ritz, and Parmesan until creamy and combined.
  4. Flatten portions of dough in floured hands, add a spoonful of crab filling, and seal into a ball.
  5. Place seam-side down in muffin cups.
  6. Bake 12–15 minutes until golden.
  7. Brush hot biscuits with melted butter mixed with lemon juice. Serve warm.

Notes

Use lump crab and mix gently to keep chunks intact. Seal biscuits well and place seam-side down. Brush with lemon butter while hot. Filling can be made ahead. Best served warm. Freeze unbaked for later. Adjust mayonnaise for desired filling consistency.
