Ingredients
  

For the Chicken
  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ cup almond flour or gluten-free breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 large eggs beaten
  • 2 tbsp olive oil
For the Sauce
  • 2 tbsp butter or ghee
  • 3 cloves garlic minced
  • 1 cup heavy cream or coconut cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes optional
  • Fresh parsley chopped

Method
 

  1. Season chicken and dredge in egg, then almond flour & cheese.
  2. Pan-fry chicken in olive oil until golden and cooked through.
  3. In the same skillet, make sauce with butter, garlic, cream, broth, and cheese. Simmer until thickened.
  4. Return chicken to skillet, coat in sauce, and simmer briefly. Garnish and serve.
