Creamy Garlic Parmesan Chicken Pasta Bake

Ingredients
  

  • - 1 lb pasta penne, rotini, or other short pasta
  • - 2 cups cooked chicken shredded or cubed
  • - 1 tbsp olive oil
  • - 4 cloves garlic minced
  • - ¼ cup all-purpose flour
  • - 2 cups milk
  • - ½ cup chicken broth
  • - 1 cup grated Parmesan cheese
  • - ½ cup shredded mozzarella cheese
  • - ¼ cup fresh parsley chopped
  • - Salt and pepper to taste

Equipment

  • 9×13-inch baking dish
  • Large pot for boiling pasta
  • Large skillet or saucepan for sauce
  • whisk
  • Mixing spoon or spatula
  • Cheese grater (if using fresh Parmesan)

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Cook pasta until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté garlic for 1 minute.
  4. Stir in flour and cook 1–2 minutes, whisking constantly.
  5. Gradually whisk in milk and chicken broth until thickened.
  6. Remove from heat. Stir in cheeses and parsley. Season with salt and pepper.
  7. Add cooked pasta and chicken. Mix to coat.
  8. Transfer to baking dish. Top with extra cheese if desired.
  9. Bake 20–25 minutes until bubbly and golden.
  10. Let rest 5 minutes before serving.

Notes

Use leftover rotisserie chicken or turkey. Add steamed broccoli for extra nutrition.
