Creamy Pork Chop Rice Casserole

Ingredients
  

  • 4 boneless pork chops
  • 1 can cream of mushroom soup
  • cups uncooked white rice
  • 2 cups chicken broth
  • cups shredded cheddar cheese
  • Salt and pepper to taste
  • Garlic powder optional

Equipment

  • 9x13 baking dish, foil

Method
 

  1. Preheat oven to 375°F. Spread uncooked rice in a 9x13 dish.
  2. Mix soup and broth until smooth; pour over rice.
  3. Season pork chops and place on top of the rice mixture.
  4. Cover tightly with foil and bake 45 minutes.
  5. Remove foil, top with cheddar, and bake uncovered 10–15 minutes until cheese is melted and golden.
  6. Rest 5 minutes before serving.

Notes

Cream of chicken soup works as a substitute. Use regular uncooked white rice (not instant). Resting time helps the rice finish absorbing liquid. Extra cheese creates more crispy edges. Check that pork reaches 145°F.
