Creamy Taco Soup

Smoky, cheesy, and incredibly comforting — this one-pot taco soup combines tender ground beef, chipotle-spiced tomatoes, and creamy cheese for a satisfying, crowd-pleasing dinner.

Ingredients
  

  • 1 lb ground beef
  • 1 can 10 oz diced tomatoes with chipotle peppers
  • 1 packet 1 oz taco seasoning (low sodium)
  • 4 cups chicken broth
  • 1 block 8 oz cream cheese, softened
  • Optional Toppings:
  • Cheddar cheese sour cream, tortilla chips, cilantro, avocado, jalapeños

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Ladle
  • Measuring cups and spoons

Method
 

  1. Brown beef in a pot over medium heat; drain grease.
  2. Add tomatoes and taco seasoning; stir and cook 2–3 minutes.
  3. Pour in chicken broth and simmer 15–20 minutes.
  4. Stir in cream cheese until melted and smooth.
  5. Serve hot with your favorite toppings.

Notes

Top with crushed tortilla chips and extra cheddar for the ultimate creamy crunch!
