Ingredients
  

  • 1 small cabbage finely shredded
  • 1 onion finely chopped
  • 1 carrot grated
  • 2 eggs
  • 4 tablespoons flour
  • Salt to taste
  • Oil for frying

Method
 

  1. Place shredded cabbage, grated carrot, and chopped onion in a large bowl. Sprinkle with salt and let sit 5 minutes.
  2. Add eggs and mix well. Stir in flour until the mixture just holds together.
  3. Heat a generous layer of oil in a large skillet over medium heat until shimmering.
  4. Scoop 2–3 tablespoons of mixture per fritter, flatten gently into patties, and place in the hot oil.
  5. Fry 3–4 minutes per side until deeply golden and crispy.
  6. Drain on paper towels. Serve warm with sour cream, lemon, or herbs.

Notes

Finely shred the cabbage for best texture. Do not skip the salting step. Cook in batches so the oil stays hot. Best eaten fresh but leftovers reheat well in the oven or air fryer. Mixture can be prepared ahead through the salting step.
