Crispy Chicken Bacon Ranch Quesadillas

Quick, cheesy quesadillas loaded with ranch-coated chicken, crispy bacon, and two kinds of melted cheese. Ready in about 15 minutes for the ultimate easy weeknight dinner.

Ingredients
  

  • 2 cups cooked shredded chicken (rotisserie preferred)
  • 6 slices bacon cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • cup ranch dressing
  • 4 large flour tortillas
  • Butter for cooking

Equipment

  • Large skillet
  • spatula
  • mixing bowl
  • Knife or pizza cutter

Method
 

  1. Mix shredded chicken with ranch dressing until evenly coated.
  2. Heat a large skillet over medium heat and add a little butter.
  3. Place one tortilla in the pan. Sprinkle cheddar and mozzarella over half of it.
  4. Add a layer of the ranch chicken, then crumbled bacon.
  5. Top with more cheese.
  6. Fold the tortilla in half and press gently with a spatula.
  7. Cook 3 minutes until golden and crispy on the bottom. Flip carefully.
  8. Cook another 2–3 minutes until the second side is browned and the cheese is fully melted.
  9. Repeat with remaining tortillas.
  10. Slice into wedges and serve immediately.

Notes

Second layer of cheese is key for holding the filling together.
Medium heat prevents burning before the cheese melts.
Serve with extra ranch, sour cream, or salsa if desired.
Best eaten fresh while the exterior is crisp and the cheese is gooey.
