Crispy Fried Potatoes and Onions

Ingredients
  

  • 4 –5 medium russet or Yukon gold potatoes sliced into ¼-inch rounds
  • 1 large onion sliced
  • 3 –4 tablespoons vegetable oil or butter
  • Salt and black pepper to taste

Method
 

  1. Slice potatoes into even ¼-inch rounds (peel if desired).
  2. Heat oil in a large skillet over medium heat until shimmering.
  3. Add potatoes in a single layer and cook undisturbed about 5 minutes until bottoms are golden.
  4. Flip potatoes, add sliced onions, and season with salt and pepper.
  5. Cook, stirring occasionally, until potatoes are fork-tender and onions are soft and caramelized, about 15–20 minutes total.
  6. Taste, adjust seasoning, and serve hot from the skillet.

Notes

Even slices and medium heat are key. Let the potatoes brown before stirring. Excellent with eggs, meats, or on their own. Leftovers reheat well in a hot skillet.
