Crispy Potato Cheese Sticks

These crispy-on-the-outside, gooey-on-the-inside potato cheese sticks are the ultimate snack! Easy to make and bursting with flavor, they’re perfect for parties, game nights, or just craving something indulgent.

Ingredients
  

For the Potato Dough:
  • - 3 large russet potatoes about 1.5 lbs
  • - 1 tsp garlic powder
  • - 1 tsp onion powder
  • - ½ tsp smoked paprika
  • - 1 egg yolk
For the Cheese Filling:
  • - 8 oz mozzarella cheese cut into sticks
  • - 2 oz cheddar or pepper jack optional
For the Coating:
  • - ½ cup flour
  • - 1 egg + 1 tbsp water egg wash
  • - 1 cup panko breadcrumbs
  • - ½ cup grated Parmesan
  • - 1 tsp Italian seasoning

Equipment

  • Large pot (for boiling potatoes)
  • mixing bowl
  • Cheese grater
  • Baking sheet or wire rack
  • Shallow bowls (for dredging station)
  • Deep fryer or large skillet (for frying)
  • Tongs or slotted spoon

Method
 

  1. Boil and mash potatoes until smooth.
  2. Mix in garlic, onion, paprika, and egg yolk to form dough.
  3. Flatten 1 tbsp of potato mixture, wrap around cheese stick, and seal.
  4. Dredge in flour, dip in egg wash, then coat in panko-Parmesan mix.
  5. Fry at 350°F for 2–3 mins or bake at 425°F for 20–25 mins.
  6. Serve hot with dipping sauces of choice.
