Method
- Preheat oven to 400°F.
- Pat the chicken thighs completely dry with paper towels.
- Season the chicken generously on both sides with salt, pepper, and paprika.
- Add potatoes, carrots, and smashed garlic to a large baking dish.
- Toss the vegetables with olive oil, salt, and pepper.
- Nestle the chicken thighs on top of the vegetables, skin side up.
- Add fresh thyme or rosemary if using.
- Roast uncovered for 45 to 50 minutes, until the chicken skin is deeply golden and crispy, the potatoes are fork-tender, and the chicken is cooked through.
- Let rest for 5 minutes before serving.
- Spoon pan drippings over the chicken and vegetables before serving.
Notes
For the crispiest skin, pat the chicken dry very well before seasoning.
Do not cover the pan while roasting.
Use a thermometer to confirm the chicken reaches at least 165°F.
Add quick-cooking vegetables like green beans during the last 15 minutes if desired.
