- Flake salmon in a bowl.
- Stir in mayo, egg, and onion.
- Add flour, cornmeal, seasoning; mix gently.
- Shape into 4 patties.
- Fry in hot oil 3–4 minutes per side until golden.
Notes
Chill patties briefly if mixture feels soft
Drain salmon very well
Cast iron gives best crust
Serve immediately for best texture
