Crispy Southern Salmon Fritters

Golden, crispy salmon fritters made with canned salmon, cornmeal, and simple pantry ingredients—quick, budget-friendly Southern comfort food.

Ingredients
  

  • 1 14.75 oz can pink salmon, drained
  • 3 tbsp mayonnaise
  • 1 large egg beaten
  • ¼ cup minced onion
  • ¼ cup all-purpose flour
  • ¼ cup cornmeal
  • Salt & pepper to taste
  • Oil for frying

Equipment

  • Medium mixing bowl
  • Fork
  • Heavy skillet (cast iron preferred)
  • spatula
  • Paper towels

Method
 

  1. Flake salmon in a bowl.
  2. Stir in mayo, egg, and onion.
  3. Add flour, cornmeal, seasoning; mix gently.
  4. Shape into 4 patties.
  5. Fry in hot oil 3–4 minutes per side until golden.

Notes

Chill patties briefly if mixture feels soft
Drain salmon very well
Cast iron gives best crust
Serve immediately for best texture
