Crock Pot Chicken Pot Pie

This Crock Pot Chicken Pot Pie is a creamy, comforting slow cooker dinner made with tender shredded chicken, mixed vegetables, savory gravy, and fluffy biscuits cooked right on top.

Ingredients
  

  • 2 pounds boneless skinless chicken breasts or thighs
  • 2 cans 10.5 oz each, cream of chicken soup
  • 1 can 10.5 oz, cream of celery soup
  • 1 bag 16 oz, frozen mixed vegetables
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 can refrigerated biscuit dough 8 biscuits
  • Fresh parsley for garnish

Method
 

  1. Place the chicken in the bottom of the slow cooker.
  2. In a bowl, whisk together the cream of chicken soup, cream of celery soup, chicken broth, garlic powder, onion powder, black pepper, and thyme until smooth.
  3. Pour the sauce mixture over the chicken.
  4. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours, until the chicken is tender and shreds easily.
  5. Remove the chicken, shred it with two forks, then return it to the slow cooker.
  6. Stir in the frozen mixed vegetables until evenly combined.
  7. Arrange the biscuit dough over the top of the chicken mixture, pressing each biscuit slightly into the sauce.
  8. Cover and cook on high for 30 to 40 minutes, until the biscuits are cooked through.

Notes

For more golden biscuit tops, transfer the filling to an oven-safe dish, place biscuits on top, and bake at 375°F until golden.
Use low-sodium broth if you are sensitive to salt.
Store leftovers in the refrigerator for up to 4 days.
For freezing, freeze the filling without the biscuits for best texture.
