- Place the chicken in the bottom of the slow cooker.
- In a bowl, whisk together the cream of chicken soup, cream of celery soup, chicken broth, garlic powder, onion powder, black pepper, and thyme until smooth.
- Pour the sauce mixture over the chicken.
- Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours, until the chicken is tender and shreds easily.
- Remove the chicken, shred it with two forks, then return it to the slow cooker.
- Stir in the frozen mixed vegetables until evenly combined.
- Arrange the biscuit dough over the top of the chicken mixture, pressing each biscuit slightly into the sauce.
- Cover and cook on high for 30 to 40 minutes, until the biscuits are cooked through.
Notes
For more golden biscuit tops, transfer the filling to an oven-safe dish, place biscuits on top, and bake at 375°F until golden.
Use low-sodium broth if you are sensitive to salt.
Store leftovers in the refrigerator for up to 4 days.
For freezing, freeze the filling without the biscuits for best texture.
