Ingredients

  • 2 lbs pork ribs baby back or spare ribs
  • 1 cup ketchup
  • 2 tablespoons packed brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • Salt to taste

Equipment

  • Slow cooker, mixing bowl, foil-lined baking sheet

Method

  1. Remove the membrane from the back of the ribs. Cut into sections of 3–4 ribs. Season with salt.
  2. Whisk together ketchup, brown sugar, Worcestershire, apple cider vinegar, garlic powder, onion powder, smoked paprika, black pepper, and olive oil.
  3. Place ribs in the slow cooker and pour the sauce over them, coating well.
  4. Cover and cook on LOW for 8 hours until the meat is very tender.
  5. Transfer ribs to a foil-lined baking sheet. Brush with sauce from the slow cooker.
  6. Broil on high 3–5 minutes until the sauce is bubbly and caramelized.
  7. Serve immediately with remaining sauce.

Notes

Removing the membrane is important for tenderness. Low and slow produces the best texture. The final broil creates the sticky finish. Baby back or spare ribs both work well. Sauce can be made ahead. Excellent leftovers. Serve with classic barbecue sides.
