Crockpot Honey Butter Ranch Chicken with Potatoes & Carrots

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 medium potatoes diced
  • 1 cup baby carrots or thick carrot rounds
  • ½ cup melted butter
  • cup honey
  • 1 packet ranch seasoning
  • Salt and pepper to taste

Equipment

  • Slow cooker (6-quart or larger)

Method
 

  1. Place diced potatoes and carrots in the bottom of the crockpot.
  2. Lay chicken breasts on top.
  3. Whisk melted butter, honey, and ranch seasoning; pour evenly over everything.
  4. Season with salt and pepper.
  5. Cover and cook on low 6–7 hours or high 3–4 hours, until chicken is cooked and potatoes are tender.
  6. Spoon the sauce from the bottom over the chicken and vegetables before serving.

Notes

Cut potatoes evenly for consistent cooking. Low setting yields the most tender results. The sauce at the bottom is the best part — spoon it over everything. Excellent for busy days and leftovers. Adjust salt to taste after cooking. Add extra vegetables if desired.
