Crockpot Honey Ranch Chicken with Potatoes, Corn & Bacon

Easy crockpot honey ranch chicken with baby potatoes, sweet corn, and bacon. Tender chicken and buttery potatoes cook in a savory-sweet glaze for a complete, hands-off comfort meal.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 lb baby potatoes halved
  • 1 can 15 oz sweet corn, drained
  • 6 strips bacon cooked and crumbled
  • 1 packet ranch seasoning
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Equipment

  • Slow cooker (6-quart or larger)

Method
 

  1. Place halved potatoes in the bottom of the crockpot.
  2. Lay chicken breasts on top.
  3. Whisk ranch seasoning, honey, olive oil, and garlic powder; pour over chicken and potatoes.
  4. Add drained corn and half the crumbled bacon. Season with salt and pepper.
  5. Cover and cook on low 5–6 hours or high 3–4 hours, until chicken is cooked and potatoes are tender.
  6. Top with remaining bacon and parsley before serving.

Notes

Cook bacon until crisp before adding. Low setting yields the most tender results. Add remaining bacon at the end for best texture. Excellent for busy days and leftovers. Adjust salt to taste after cooking. Double if needed for larger groups.
