Crustless Spinach & Cottage Cheese Quiche

Light and fluffy crustless quiche made with cottage cheese, spinach, eggs, and shredded cheese. Protein-packed, one-bowl, and perfect for brunch or meal prep.

Ingredients
  

  • 1 cup cottage cheese
  • 1 cup fresh spinach roughly chopped (or frozen, thawed and squeezed dry)
  • 4 large eggs
  • ½ cup shredded cheddar or mozzarella
  • ¼ cup diced green onions or yellow onion
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • Optional: pinch of nutmeg

Equipment

  • 9-inch pie dish or quiche pan

Method
 

  1. Preheat oven to 375°F. Lightly grease a 9-inch pie dish.
  2. Whisk eggs until smooth and slightly frothy.
  3. Stir in cottage cheese, spinach, shredded cheese, onions, garlic powder, salt, pepper, and optional nutmeg.
  4. Pour into the prepared dish and spread evenly.
  5. Bake 30–35 minutes until the center is set and the top is golden.
  6. Cool 5 minutes before slicing. Serve warm.

Notes

Squeeze frozen spinach very dry. Whisk eggs well for a light texture. Rest 5 minutes before slicing. Leftovers reheat excellently. Add sautéed mushrooms or feta for variation.
