- Line a baking sheet with wax paper or parchment.
- In a heavy saucepan, combine sugar, corn syrup, and water. Stir over medium heat until sugar dissolves, then boil without stirring until the syrup reaches 260°F (hard-ball stage).
- While the syrup cooks, beat egg whites to stiff, glossy peaks.
- With the mixer running, slowly pour the hot syrup into the egg whites in a thin stream. Continue beating until the mixture loses its gloss and holds its shape (5–8 minutes).
- Quickly fold in vanilla and chopped pecans.
- Drop spoonfuls onto the prepared paper and let set until firm, about 2 hours.
- Store in an airtight container with wax paper between layers.
Notes
Use a candy thermometer for accuracy. Choose a dry day if possible—humidity affects setting. Beat until the mixture truly loses gloss and holds shape. Work quickly when dropping. Toast pecans for best flavor. Store airtight at room temperature up to 2 weeks. Excellent for holiday gifting.
