- Preheat oven to 350°F and grease a 9x13 baking dish.
- Brown the ground beef in a large skillet over medium-high heat until no longer pink.
- Drain the grease.
- Stir in the taco seasoning and cook for 1 minute until fragrant.
- Add the Rotel with juices, cream of chicken soup, and sour cream.
- Stir until creamy and fully combined.
- Spread half of the crushed Doritos across the bottom of the prepared baking dish.
- Pour the beef mixture evenly over the Doritos.
- Sprinkle 1 cup shredded cheese over the beef layer.
- Top with the remaining crushed Doritos.
- Sprinkle the remaining 1 cup cheese over the top.
- Bake for 20 to 25 minutes, until the cheese is melted and the edges are bubbling.
- Let cool for 5 minutes.
- Add desired toppings and serve warm.
Notes
Do not crush Doritos too finely.
For best texture, assemble right before baking.
Make the beef filling ahead and add chips when ready to bake.
Store leftovers in the refrigerator for up to 4 days.
