Easy Brownie Cookies — Chewy, Chocolatey, and Ready in Minutes!

Ingredients
  

  • 1 box 18.3 oz brownie mix
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 2 tablespoons all-purpose flour
  • Optional: 1/2 cup chopped nuts or chocolate chips

Equipment

  • Baking sheet
  • Parchment paper
  • mixing bowl
  • Spoon or cookie scoop
  • Wire cooling rack

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix brownie mix, eggs, vegetable oil, and flour until just combined. Fold in nuts or chocolate chips if using.
  3. Drop spoonfuls onto baking sheet, spacing 2 inches apart.
  4. Bake 9-11 minutes until edges are set but centers still soft.
  5. Cool on sheet 5 minutes, then transfer to wire rack to cool completely.
  6. Serve and enjoy!

Notes

Don’t overbake for chewy texture.
Store in airtight container up to 4 days.
