- Line a baking sheet with parchment paper.
- Arrange pecans in small clusters of 3 to 4 halves, leaving space between each cluster.
- In a microwave-safe bowl, melt caramels with heavy cream in 30-second bursts, stirring between each, until smooth and pourable.
- Spoon about 1 tablespoon warm caramel over each pecan cluster.
- Let cool for 15 minutes, until the caramel sets but is still slightly tacky.
- Melt chocolate chips with coconut oil in the microwave, stirring every 20 seconds until smooth and glossy.
- Spoon melted chocolate over each caramel-pecan cluster, covering completely.
- Tap the pan gently on the counter to smooth the tops.
- Sprinkle with sea salt while the chocolate is still wet, if using.
- Refrigerate for 30 minutes, until firm.
Notes
Toast the pecans for deeper flavor.
