- In a large sauté pan over medium heat, melt 2 tablespoons butter. Add shrimp and cook 1–2 minutes per side until opaque. Transfer to a plate and cover.
- Add remaining 1 tablespoon butter and minced garlic to the pan. Cook 30 seconds until fragrant.
- Add chicken broth, milk, and fettuccine. Stir to separate noodles. Bring to a boil, then cover, reduce heat to low, and simmer about 11 minutes until al dente, stirring once halfway.
- Remove lid. Stir in heavy cream, Parmesan, pepper, and nutmeg until cheese is melted and sauce is smooth.
- Return shrimp to the pan and stir to combine. Remove from heat and let rest 5 minutes to thicken.
- Garnish with parsley and serve immediately.
Notes
Pat shrimp dry before cooking. Use freshly grated Parmesan for best texture. Resting time is important for sauce consistency. Leftovers reheat gently with a splash of milk or cream.
