- Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- Unroll one can of crescent roll dough and press into bottom of dish, sealing seams.
- Spread half of Thousand Island dressing over dough. Layer corned beef, sauerkraut, Swiss cheese, and remaining dressing.
- Unroll second can of dough, place on top, and seal edges.
- Brush top crust with melted butter. Sprinkle poppy seeds if using.
- Bake 25-30 minutes until golden and bubbly. Cool slightly, slice, and serve warm.
