Easy Reuben Bake Recipe

This Easy Reuben Bake combines tender corned beef, tangy sauerkraut, creamy Swiss cheese, and zesty Thousand Island dressing—all baked into a buttery

Ingredients
  

  • - 2 8-ounce cans refrigerated crescent roll dough
  • - 1 pound pre-cooked corned beef thinly sliced or chopped
  • - 1 14-ounce can sauerkraut, drained and squeezed dry
  • - 12 slices Swiss cheese or 2 cups shredded Swiss cheese
  • - ½ cup Thousand Island dressing
  • - 2 tablespoons melted butter
  • - Poppy seeds optional, for garnish

Equipment

  • 9×13-inch baking dish
  • - Pastry brush (optional)

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. Unroll one can of crescent roll dough and press into bottom of dish, sealing seams.
  3. Spread half of Thousand Island dressing over dough. Layer corned beef, sauerkraut, Swiss cheese, and remaining dressing.
  4. Unroll second can of dough, place on top, and seal edges.
  5. Brush top crust with melted butter. Sprinkle poppy seeds if using.
  6. Bake 25-30 minutes until golden and bubbly. Cool slightly, slice, and serve warm.

Notes

- Store leftovers refrigerated up to 3 days; reheat in oven or microwave.
- Substitute pastrami or turkey for a tasty twist.
- Ensure sauerkraut is well-drained to avoid a soggy bake.
