Easy Roasted Roma Tomato Sauce

A rich homemade roasted tomato sauce made with fresh Roma tomatoes, roasted garlic, onions, basil, and olive oil. Perfect for pasta, pizza, lasagna, chicken, meal prep, and freezer-friendly family dinners.

Ingredients
  

  • 12 Roma tomatoes halved
  • 1 medium onion quartered
  • 6 –8 garlic cloves peeled
  • 3 tbsp extra-virgin olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried basil or fresh basil
  • Pinch red pepper flakes optional

Equipment

  • - Rimmed baking sheet
  • Foil or parchment paper
  • Chef's knife
  • High-speed blender or food processor
  • Measuring spoons
  • Airtight freezer-safe containers

Method
 

  1. Preheat oven to 400°F.
  2. Arrange tomatoes, onions, and garlic on a lined baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast for 35–40 minutes until tender and caramelized.
  5. Transfer everything, including pan juices, to a blender.
  6. Add basil and red pepper flakes.
  7. Blend until smooth.
  8. Adjust seasoning and serve.

Notes

Roma tomatoes create the thickest sauce.
Roast until lightly caramelized for the best flavor.
Blend all roasting juices.
Freeze for up to 6 months.
Excellent for pasta, pizza, meatballs, soups, casseroles, and meal prep.
