Flourless Vanilla Oatmeal Pancakes – Your Healthy Breakfast Obsession

Ingredients
  

  • 2 cups rolled oats
  • 2 eggs
  • 1 cup milk
  • 1 ripe banana
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • ½ tsp cinnamon optional
  • Pinch of salt
  • Butter/coconut oil for cooking

Equipment

  • Blender (for the batter)
  • Non-stick skillet or griddle
  • Measuring cups & spoons
  • spatula

Method
 

  1. Blend all ingredients until smooth. Let rest 5 minutes.
  2. Heat skillet with butter or oil over medium heat.
  3. Pour ¼ cup batter for each pancake. Cook 2–3 minutes until bubbles form, flip, and cook another 1–2 minutes.
  4. Serve warm with toppings of choice.

Notes

Let Batter Rest – Gives oats time to absorb liquid for fluffier pancakes.
Cook Low & Slow – Prevents burning since oat batter browns faster.
Add Mix-Ins – Fold in blueberries, chocolate chips, or chopped nuts for variety.
Make Ahead – Freeze in single layers and reheat in the toaster for a quick healthy breakfast.
