Ingredients
  

  • 8 large flour tortillas
  • 1 lb deli roast beef thinly sliced
  • 2 cups shredded provolone or mozzarella cheese
  • 2 tbsp butter melted
  • 1 tsp garlic powder
  • 1 cup beef broth for dipping
  • Fresh parsley chopped (optional)

Method
 

  1. Warm tortillas slightly so they are pliable.
  2. Layer roast beef and shredded cheese down the center of each tortilla. Roll tightly, tucking in the sides.
  3. Mix melted butter with garlic powder and brush over the rolls.
  4. Cook seam-side down in a medium-heat skillet 2–3 minutes per side until golden and crispy and the cheese is melted.
  5. Warm the beef broth for dipping.
  6. Slice if desired, garnish with parsley, and serve with warm au jus.

Notes

Warm tortillas to prevent cracking. Roll tightly and start seam-side down. Medium heat melts the cheese while crisping the tortilla. Simple warmed beef broth makes an excellent au jus. Best served immediately. Excellent for game day or easy dinners. Reheat leftovers in a skillet or air fryer.
