- Heat olive oil in a large skillet over medium heat. Add sliced onions and cook 12–15 minutes, stirring occasionally, until golden and caramelized.
- Push onions aside; add ground beef and cook until browned, breaking it up.
- Stir in garlic and cook 1 minute.
- Add Worcestershire, beef broth, tomato paste, and Dijon. Simmer 8–10 minutes until sauce thickens. Season with salt and pepper.
- Lay cheese slices over the mixture, cover, and melt 2 minutes.
- Spoon onto toasted buns and serve immediately.
Notes
Take time with the onions for the best flavor. Toast the buns to prevent sogginess. Provolone or Swiss both work well; mozzarella is a fine substitute. Messy in the best way—serve with plenty of napkins. Filling can be made ahead and reheated.
