Fresh Zucchini Salsa

Fresh zucchini salsa made with diced zucchini, tomatoes, jalapeño, onion, garlic, lime juice, and cilantro. Bright, tangy, and the perfect way to use garden zucchini. No cooking required.

Ingredients
  

  • 2 medium zucchinis finely diced
  • 2 medium tomatoes diced
  • 1 jalapeño pepper seeded and minced
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • Juice of 2 limes
  • ¼ cup fresh cilantro chopped
  • 1 teaspoon salt or to taste
  • ½ teaspoon cumin
  • ¼ teaspoon black pepper

  • Large mixing bowl, sharp knife

Method
 

  1. Finely dice the zucchini to match the size of the tomatoes.
  2. Combine zucchini, tomatoes, jalapeño, onion, and garlic in a large bowl.
  3. Add lime juice and toss.
  4. Stir in cilantro, salt, cumin, and black pepper.
  5. Let sit at least 15 minutes for flavors to develop.
  6. Taste and adjust seasoning. Serve with chips or as a topping.

Notes

Best texture comes from even, small dice. Adjust jalapeño seeds for heat level. Flavors improve after resting. Store in the refrigerator up to 5 days. Excellent with chips, tacos, grilled proteins, or eggs. Not ideal for freezing.
