Fudgy Brownie Mix Cookies

Ingredients
  

  • 1 box brownie mix 18–20 oz
  • 1 large egg
  • 3 tablespoons vegetable oil or melted coconut oil
  • 2 tablespoons water
  • ½ cup chocolate chips optional
  • Flaky sea salt for topping optional

  • Mixing bowl, baking sheet, parchment paper

Method
 

  1. Preheat oven to 350°F. Line a baking sheet with parchment.
  2. Mix brownie mix, egg, oil, and water until a thick dough forms.
  3. Fold in chocolate chips if using.
  4. Scoop tablespoon-sized balls onto the sheet.
  5. Bake 8–10 minutes until edges are set and centers look soft.
  6. Cool on the pan 5 minutes, then transfer to a rack. Sprinkle with flaky salt if desired.

Notes

The dough should be thick. Do not overbake — centers should still look soft when you pull them. They firm up as they cool. Melted butter can replace the oil. Optional chocolate chips and sea salt elevate them further.
