Garlic Soup (Old-World Comfort Style)

A silky, deeply comforting garlic soup made with slow-cooked cloves, rustic bread, and aromatic herbs — nourishing, warming, and timeless.

Ingredients
  

  • 50 cloves garlic peeled
  • 2 large yellow onions diced
  • 2 tbsp olive oil
  • 3 cups stale bread cubed
  • 6 cups chicken or vegetable broth
  • 2 –3 sprigs thyme or parsley
  • Salt and pepper to taste

Equipment

  • Large pot or Dutch oven
  • immersion blender
  • knife
  • Cutting board

Method
 

  1. Roast garlic at 350°F for 15–20 minutes (optional).
  2. Sauté onions in olive oil until soft.
  3. Add garlic; warm gently.
  4. Add bread and broth; simmer 15–20 minutes.
  5. Remove herbs and blend until smooth.
  6. Season and serve warm.

Notes

Roasting garlic is optional but recommended for sweetness
Use stale bread for best thickness
Soup thickens as it cools — add broth when reheating
Avoid boiling after blending to keep texture smooth
