German Lebkuchen Bars

Soft and chewy German honey spice bars with cinnamon, cloves, nutmeg, toasted nuts, and a sweet vanilla glaze. Perfect for Christmas baking and holiday gifting.

Ingredients
  

  • For the Bars
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp cloves
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ¾ cup honey
  • ½ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • Zest of 1 lemon
  • 1 cup chopped almonds or hazelnuts
  • For the Glaze
  • 1 cup powdered sugar
  • 2 –3 tbsp milk or lemon juice
  • ½ tsp vanilla

Equipment

  • - 9x13 baking pan
  • Parchment paper
  • mixing bowls
  • whisk
  • spatula
  • Zester

Method
 

  1. Preheat oven to 350°F and line pan with parchment.
  2. Whisk dry ingredients.
  3. Whisk honey, sugar, eggs, vanilla, zest.
  4. Combine wet and dry. Stir in nuts.
  5. Spread in pan and bake 20–25 minutes.
  6. Cool completely.
  7. Whisk glaze ingredients and drizzle over top.
  8. Let set and slice into bars.

Notes

Do not overbake.
Flavor improves after resting overnight.
Store airtight for up to 10 days.
