- Boil the potatoes in salted water until fork-tender, about 15 minutes. Drain well and let them steam dry for 1 minute.
- Mash the potatoes until smooth.
- Stir in the softened butter, cheddar cheese, sour cream, beaten egg, garlic, salt, and pepper until well combined.
- Let the mixture cool for 15–20 minutes.
- Roll into golf ball-sized portions and place on a prepared baking sheet.
- Brush each puff with melted butter and sprinkle generously with Parmesan cheese.
- Bake at 400°F (200°C) for 25–30 minutes, until golden brown and crispy.
- Cool for 5 minutes before serving.
