Gooey Cinnamon Cream Cheese Muffins

Ingredients
  

  • * 2 cups all-purpose flour
  • * 1 cup granulated sugar
  • * 1 tbsp baking powder
  • * ½ tsp salt
  • * 1 tsp ground cinnamon
  • * ½ cup unsalted butter melted
  • * 1 cup milk
  • * 2 large eggs
  • * 1 tsp vanilla extract
For the Cream Cheese Filling:
  • * 8 oz cream cheese softened
  • * ¼ cup powdered sugar
Optional Topping:
  • * 2 tbsp granulated sugar mixed with ½ tsp ground cinnamon cinnamon sugar
  • * Melted vanilla cream or white chocolate for drizzle

Method
 

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk melted butter, milk, eggs, and vanilla.
  4. Beat cream cheese and powdered sugar until smooth for filling.
  5. Add wet ingredients to dry and stir until just combined; don’t overmix.
  6. Fill muffin liners halfway with batter, add cream cheese filling, then top with remaining batter.
  7. Sprinkle with cinnamon sugar (optional) and bake 18-22 minutes until golden.
  8. Cool in pan for a few minutes, then transfer to a wire rack. Drizzle with melted vanilla cream or white chocolate if desired.

Notes

* Muffins freeze well; reheat gently before serving.
* Add fruit preserves or nuts for extra flavor.
* Serve warm with coffee or tea.
