Ingredients
  

  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 –5 medium potatoes sliced thin
  • 1 cup shredded cheddar cheese
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup milk
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley chopped
  • Optional: diced bell pepper

  • 9x13-inch baking dish, large skillet

Method
 

  1. Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish.
  2. Brown ground beef in a skillet; add onion and garlic and cook until softened. Season with paprika, salt, and pepper.
  3. Whisk soup and milk until smooth.
  4. Layer half the potatoes, half the beef, and half the soup mixture in the dish. Repeat the layers.
  5. Cover tightly with foil and bake 50–60 minutes until potatoes are fork-tender.
  6. Remove foil, sprinkle with cheddar, and bake uncovered 10 minutes until cheese is melted and bubbly.
  7. Rest 5 minutes, garnish with parsley, and serve.

Notes

Slice potatoes thinly and evenly. Cover tightly so the potatoes steam. Test for tenderness before adding cheese. Freshly shredded cheddar melts best. Leftovers reheat well. Optional bell pepper can be cooked with the onion.
