Healthy Banana Oat Cookies

Ingredients
  

  • 3 ripe bananas mashed
  • 1/3 cup unsweetened applesauce
  • 2 cups rolled oats
  • 1/4 cup almond milk
  • 1/4 cup raisins or chopped nuts
  • 1/2 tsp vanilla extract optional
  • 1/2 tsp ground cinnamon optional

Equipment

  • mixing bowl
  • Fork or potato masher (for mashing bananas)
  • Spoon or cookie scoop
  • Baking sheet
  • Parchment paper or silicone baking mat

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mash bananas until smooth.
  3. Mix in applesauce, almond milk, and vanilla.
  4. Stir in oats, cinnamon, and salt until just combined.
  5. Fold in raisins or nuts.
  6. Scoop onto baking sheet and flatten slightly.
  7. Bake 15–20 minutes until golden.
  8. Cool, then enjoy!

Notes

For extra flavor, add sugar-free chocolate chips or shredded coconut.
