Ingredients
  

  • 1 lb ground beef
  • 1 medium onion chopped
  • 3 carrots sliced into rounds
  • 3 medium potatoes peeled and cubed
  • 1 can 14.5 oz diced tomatoes
  • 4 cups beef broth
  • 2 cups frozen mixed vegetables
  • 2 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme or Italian seasoning
  • 1 bay leaf

Method
 

  1. Brown ground beef in a large pot over medium heat until no pink remains. Drain excess grease if needed.
  2. Add onion and garlic; cook until onion softens.
  3. Add beef broth, diced tomatoes, carrots, and potatoes. Stir in salt, pepper, thyme, and bay leaf.
  4. Bring to a boil, then simmer 20 minutes until potatoes are fork-tender.
  5. Stir in frozen mixed vegetables; simmer 10 more minutes.
  6. Remove bay leaf, taste, and adjust seasoning. Serve hot.

Notes

Brown the beef well for best flavor. Cut potatoes evenly. Add frozen vegetables at the end so they stay bright. Remove the bay leaf before serving. Soup tastes even better the next day. Excellent for leftovers and freezing. Serve with crusty bread or crackers. Easily customizable with extra vegetables or different ground meats.
