Heavenly Moist Fruitcake

A tender, rich fruitcake that’s moist, flavorful, and perfect for the holidays.

Ingredients
  

  • 1 cup butter softened
  • 1 cup sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • 1 ½ cups dried fruits raisins, cherries, apricots, dates
  • ½ cup nuts walnuts or pecans
  • Optional: ½ tsp cinnamon or nutmeg

  • Whisk & spatula
  • Measuring cups & spoons
  • cooling rack

Method
 

  1. Preheat oven to 325°F (165°C). Grease & line loaf pan.
  2. Cream butter & sugar until fluffy. Add eggs and vanilla.
  3. Whisk flour, baking powder, and spices separately.
  4. Fold dry mix into wet. Add fruits & nuts.
  5. Pour into pan. Bake 60–70 mins until toothpick comes out clean.
  6. Cool completely before slicing.

Notes

Soak dried fruits in orange juice or rum overnight for extra flavor.
Tent foil halfway if the top browns too fast.
Don’t overmix once flour is added—this keeps the crumb tender.
