High-Protein Jell-O Cheesecake Desserts

Ingredients
  

  • per flavor batch
  • 1 box sugar-free Jell-O lemon, pistachio, or butterscotch
  • 1 cup boiling water
  • ½ cup cold water
  • ¾ cup plain Greek yogurt
  • ½ cup cottage cheese blended smooth
  • 1 scoop vanilla protein powder
  • Toppings: lemon zest crushed pistachios, or sugar-free butterscotch chips

Equipment

  • Blender, mixing bowl or large jug, serving jars or ramekins

Method
 

  1. Dissolve Jell-O in boiling water; stir in cold water. Cool slightly.
  2. Blend Greek yogurt, cottage cheese, and protein powder until completely smooth.
  3. Gently mix the Jell-O mixture into the blended base until uniform.
  4. Pour into jars or bowls. Refrigerate at least 3 hours until set.
  5. Add flavor-specific topping just before serving.

Notes

Blend cottage cheese until silky—no lumps. Do not over-mix once gelatin is added. Chill fully for best texture. Make all three flavors for variety. Toppings go on at serving time. Stores well in the fridge up to 5 days. Excellent meal-prep protein dessert. Macros are approximate and vary by brand.
