Ingredients
  

  • 3 egg yolks room temperature
  • 1 cup sugar
  • 3 Tbsp all-purpose flour
  • 2 Tbsp unsweetened cocoa powder
  • 1 12 oz can evaporated milk
  • ½ stick 4 Tbsp butter
  • 1 tsp vanilla extract
  • 1 pre-baked regular pie shell not deep-dish
  • Meringue:
  • 3 egg whites
  • 4 Tbsp sugar
  • 1 Tbsp cold water
  • ½ tsp vanilla extract

Method
 

  1. Pre-bake a regular pie shell until golden; set aside.
  2. In a saucepan, cook egg yolks, sugar, flour, cocoa, evaporated milk, and butter over medium heat, stirring constantly, until thick and pudding-like. Remove from heat; stir in vanilla. Pour hot filling into the shell.
  3. Beat egg whites and cold water until foamy. Gradually add sugar and beat to soft peaks; mix in vanilla.
  4. Spread meringue over hot filling, sealing to the crust edge. Create peaks with the back of a spoon.
  5. Bake at 450°F for about 5 minutes until the meringue is golden. Cool completely before slicing.
