Method
- Dissolve the yeast in ½ cup warm water (comfortable on the wrist, not hot). Let sit about 5 minutes until foamy.
- In a clean glass jug, stir together the grape juice concentrate and 4 cups sugar until well mixed.
- Add the dissolved yeast mixture.
- Fill the jug with water, leaving a few inches of headspace for bubbling.
- Seal with an airlock or a balloon poked with a tiny hole.
- Store in a cool, dark place and ferment 3–4 weeks until bubbling slows or stops.
- Carefully siphon or pour into clean bottles, leaving the sediment behind.
- Age a few additional weeks if you can, then enjoy.
