- Brown sausage in skillet over medium-high, breaking into crumbles. Drain grease.
- Lower heat, add beer, and simmer 2–3 minutes.
- Stir in cream and seasonings. Bring to gentle simmer.
- Reduce heat to low. Gradually stir in cheeses until melted and smooth.
- Transfer to serving dish or crockpot on “warm.” Garnish and serve with chips, bread, or pretzels.
