Hot Sausage Beer Cheese Dip

Ingredients
  

  • 1 lb Italian sausage casing removed
  • 1 cup beer lager or ale
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup half-and-half or heavy cream
  • ½ tsp garlic powder optional
  • ¼ tsp black pepper optional
  • Pinch of red pepper flakes optional
  • Chopped chives or parsley optional garnish

Method
 

  1. Brown sausage in skillet over medium-high, breaking into crumbles. Drain grease.
  2. Lower heat, add beer, and simmer 2–3 minutes.
  3. Stir in cream and seasonings. Bring to gentle simmer.
  4. Reduce heat to low. Gradually stir in cheeses until melted and smooth.
  5. Transfer to serving dish or crockpot on “warm.” Garnish and serve with chips, bread, or pretzels.

Notes

Shred cheese fresh for smooth texture.
Keep heat low to prevent greasy separation.
Store up to 3 days in fridge. Reheat gently with cream or beer.
