  • 1 lb Italian sausage
  • 1 cup beer lager, pilsner, or amber ale
  • 8 oz cream cheese softened
  • 1 cup freshly shredded sharp cheddar cheese
  • ½ cup freshly shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup whole milk
  • 2 tbsp all-purpose flour
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Brown the sausage and drain the grease.
  2. Simmer the beer in a saucepan.
  3. Whisk in softened cream cheese until smooth.
  4. Gradually melt in cheddar, mozzarella, and Parmesan.
  5. Whisk milk and flour together, then stir into the cheese sauce.
  6. Add Dijon mustard and seasonings.
  7. Cook until thickened.
  8. Fold in the cooked sausage.
  9. Serve immediately with chips, pretzels, crackers, or vegetables.

Notes

Always shred your own cheese.
Keep warm in a slow cooker for parties.
Add a splash of milk if reheating.
For extra spice, use hot Italian sausage and cayenne pepper.
