Italian Cream Puffs with Custard Filling (Bignè)

Light and flaky puff pastry filled with silky custard — a true Italian treat.

Ingredients
  

  • 1 sheet puff pastry
  • Powdered sugar for dusting
  • 2 cups milk
  • 1 tsp vanilla
  • ½ cup sugar
  • ¼ cup cornstarch
  • 2 egg yolks
  • 2 tbsp butter

Equipment

  • Baking sheet
  • Parchment paper
  • saucepan
  • whisk
  • mixing bowls
  • Rolling pin (if needed for pastry)
  • Cookie cutter or sharp knife
  • Piping bag or Ziploc bag

Method
 

  1. Heat milk + vanilla. Whisk sugar, cornstarch, yolks. Temper, cook until thick. Stir in butter. Chill.
  2. Bake pastry circles at 400°F until golden. Cool.
  3. Fill with custard. Dust with sugar. Serve.

Notes

Best enjoyed fresh.
Add citrus zest or liqueur for extra flavor.
