Italian Drunken Noodles

A bold and cozy fusion dish with Italian sausage, bell peppers, and noodles tossed in a tomato-wine sauce. Comfort food with a twist!

Ingredients
  

  • 12 oz wide egg noodles
  • 1 lb Italian sausage
  • 2 tbsp olive oil
  • 1 medium yellow onion sliced
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • ½ cup dry white wine
  • 1 14 oz can diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes optional
  • Salt and black pepper to taste
  • Fresh basil and Parmesan for garnish

Equipment

  • 🍳 Large pot
  • 🍲 Deep skillet or sauté pan
  • 🥄 Wooden spoon
  • 🔪 Knife and cutting board
  • 🥣 Slotted spoon

Method
 

  1. Cook noodles and set aside.
  2. Brown sausage; remove from pan.
  3. Sauté onion and peppers; add garlic.
  4. Deglaze with wine and simmer.
  5. Add tomatoes, tomato paste, oregano, and seasonings. Return sausage.
  6. Toss in noodles and coat well.
  7. Garnish with basil and Parmesan. Serve hot.

Notes

Vegetarian? Use mushrooms and beans.
Red wine = deeper flavor.
Great for leftovers!
