Ingredients
  

  • 2 ribeye steaks about 1 inch thick
  • Salt and freshly cracked black pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter divided
  • 6 cloves garlic finely minced
  • 1 cup heavy whipping cream
  • ½ cup beef broth low-sodium preferred
  • ¼ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh parsley finely chopped, for garnish

Method
 

  1. Bring steaks to room temperature (about 30 minutes). Pat dry and season generously with salt and pepper.
  2. Heat a cast-iron skillet over medium-high heat with olive oil and 1 tablespoon butter. Sear steaks 4–5 minutes per side for medium-rare (adjust to preferred doneness).
  3. Transfer steaks to a plate and tent loosely with foil to rest.
  4. Lower heat to medium. Add remaining 2 tablespoons butter and minced garlic; sauté 30 seconds until fragrant.
  5. Pour in beef broth and scrape up browned bits.
  6. Stir in heavy cream, Parmesan, and Italian seasoning. Simmer 3–4 minutes until thickened.
  7. Return steaks and any juices to the skillet; spoon sauce over and warm 1 minute.
  8. Plate, drizzle with sauce, garnish with parsley, and serve immediately.

Notes

Pat steaks very dry for the best crust. Do not move them while searing. Rest the meat before slicing. Watch garlic closely so it does not burn. Freshly grated Parmesan melts best. Adjust sauce consistency with a splash of broth if needed. Excellent with mashed potatoes or roasted vegetables.
