Ingredients

  • 8 ounces elbow macaroni
  • cups whole milk
  • tablespoons powdered milk
  • ¾ teaspoon cornstarch
  • ½ teaspoon dry ground mustard
  • 12 ounces Velveeta cubed
  • 1 cup freshly shredded sharp cheddar cheese
  • Salt to taste

Equipment

  • Large stockpot or Dutch oven
  • colander
  • Wooden spoon
  • Silicone spatula
  • Cheese grater
  • Measuring cups and spoons

Method

  1. ook the elbow macaroni according to the package directions until al dente. Drain well and return it to the pot.
  2. Add the whole milk, powdered milk, cornstarch, dry ground mustard, and cubed Velveeta.
  3. Cook over medium-low heat, stirring constantly, until the Velveeta melts completely. Do not allow the mixture to boil.
  4. Remove the pot from the heat and gradually stir in the shredded sharp cheddar until smooth.
  5. Taste and season with salt if needed.
  6. Let the mac and cheese rest for 3–5 minutes to thicken slightly before serving.

Notes

Freshly grated cheddar melts more smoothly than pre-shredded cheese.
Keep the heat low to maintain a silky sauce.
The sauce thickens naturally as it cools.
Add a splash of milk when reheating leftovers.
Great for holidays, potlucks, and family dinners.
