Lebkuchen Bars

Chewy, honey-warm German spice bars with a glossy orange glaze. A one-pan shortcut to the classic Christmas treat — and at their absolute best 1–2 weeks after baking.

Ingredients
  

  • For the Lebkuchen Base:
  • ½ cup honey
  • ½ cup dark brown sugar packed
  • cup granulated sugar
  • 3 tbsp unsalted butter
  • cups all-purpose flour
  • ¾ tsp baking soda
  • 3 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 large egg
  • 2 tbsp orange juice
  • 1 tsp orange zest finely grated
  • tsp vanilla extract
  • ½ cup sliced unblanched almonds optional, for crunch
  • cup candied orange peel finely chopped (optional, for traditional texture)
  • For the Sweet Glaze:
  • 1 cup confectioners' powdered sugar
  • 2 tbsp orange juice or milk or lemon juice for a different tang
  • ¼ tsp freshly grated ginger
  • ¼ tsp vanilla extract

Method
 

  1. Heat the sugar syrup. In a saucepan over medium-low heat, combine the honey, brown sugar, granulated sugar, and butter. Stir until the butter has melted and the sugars are dissolved. Remove from heat and cool for about 15 minutes.
  2. Combine dry ingredients. While the syrup cools, whisk the flour, baking soda, cinnamon, and ground ginger in a medium bowl.
  3. Mix the batter & chill. Stir the egg, orange juice, orange zest, and vanilla into the cooled syrup. Fold in almonds or candied peel if using. Slowly add the flour mixture, stirring until a sticky dough forms. Press plastic wrap directly onto the surface of the dough, cover, and refrigerate for 8 hours or overnight.
  4. Bake the bars. Preheat the oven to 350°F (175°C) and grease a 9x9-inch pan. Let the chilled dough sit at room temperature for 30 minutes. Spread it evenly into the pan and bake 20–30 minutes, until a toothpick inserted in the center comes out clean.
  5. Glaze and slice. While the bars bake, whisk the glaze ingredients until smooth. The moment the pan comes out of the oven, spread the glaze evenly over the hot bars. Cool completely in the pan, then slice into bars.

Notes

These bars are at their softest and most flavorful 1–2 weeks after baking. Store in an airtight container at room temperature.
Let the syrup cool completely before adding the egg — hot syrup will curdle it.
The overnight chill is essential for texture and flavor. Don't skip it.
Glaze while the pan is hot for the classic crackled finish.
Gluten-free: use a cup-for-cup gluten-free baking blend with xanthan gum.
Dairy-free: substitute a quality plant-based butter.
