Method
- Preheat oven to 325°F (165°C). Line an 8×8-inch pan with parchment paper.
- Combine crust ingredients. Press into pan and bake for 10 minutes. Set aside.
- In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then flour, zest, juice, and vanilla. Beat until smooth.
- Pour filling over crust. Bake for 30–35 minutes or until set in the center.
- Cool completely, then refrigerate at least 4 hours or overnight.
- Slice into squares and enjoy!
