- Preheat oven to 375°F (190°C). Line baking sheets with parchment.
- Whisk flour, baking soda, baking powder, and salt.
- Cream butter and sugar until fluffy.
- Beat in eggs, lemon juice, zest, and vanilla.
- Add dry ingredients, mixing just until combined.
- Chill dough for 30 minutes.
- Roll dough into balls and coat in sugar.
- Bake 8–10 minutes until edges are lightly golden.
- Cool 5 minutes on the pan, then transfer to a rack.
