Course: Appetizer
Cuisine: American

Ingredients

  • 2 14–15 oz cans pink salmon, drained very well and flaked
  • 3 large eggs
  • ½ cup finely grated Parmesan cheese dry, shaker-style preferred
  • 2 –3 tablespoons cooking oil for frying

Equipment

  • Mixing bowl, large skillet, spatula

Method

  1. Drain salmon thoroughly, remove large bones/skin if desired, and flake in a bowl.
  2. Add eggs and Parmesan; mix until thick and combined. Rest 5 minutes if too loose.
  3. Shape into 2–2½ inch patties about ½ inch thick.
  4. Heat oil in a skillet over medium heat until shimmering.
  5. Fry patties 3–4 minutes per side until deep golden and crisp.
  6. Drain on paper towels and serve warm.

Notes

Drain the salmon very well for best results. Dry Parmesan works best as a binder. Do not overcrowd the pan. Excellent with lemon, tartar sauce, or a simple salad. Naturally low-carb.
