Low-Carb Taco Casserole

A cheesy keto taco casserole loaded with seasoned ground beef, cream cheese, sour cream, cheddar, and mozzarella. High in protein, low in carbs, and perfect for meal prep, weight loss goals, and easy family dinners.

Ingredients
  

Casserole
  • 2 lbs ground beef
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup cream cheese softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can diced green chiles optional
Toppings
  • Diced tomatoes
  • Sliced black olives
  • Chopped green onions
  • Sour cream
  • Avocado slices
  • Jalapeños

Equipment

  • Large skillet
  • 9×13-inch baking dish
  • mixing bowl
  • Silicone spatula
  • measuring cups
  • Cheese grater

Method
 

  1. Preheat oven to 350°F.
  2. Brown ground beef and drain.
  3. Add taco seasoning and simmer.
  4. Mix sour cream and cream cheese until smooth.
  5. Spread beef in baking dish.
  6. Add cream cheese layer.
  7. Sprinkle green chiles on top.
  8. Cover with cheddar and mozzarella.
  9. Bake 25–30 minutes.
  10. Top with fresh vegetables and serve.

Notes

Great for keto meal prep.
Fresh cheese melts best.
Add jalapeños for extra heat.
Stores well for up to 4 days.
Freezes beautifully.
